If You can’t Afford an extra 20% for the server which includes others the server have to tip, then maybe the diner should stay home and save up until he/she can.

What happens if a restaurant customer in the United States leaves a tip of not 20% but 10%?

That depends on how you look at it.

You're not going to get arrested or anything like that. You can pay absolutely nothing without direct consequence.

But, the thing is:

In the US, waiters do not earn the same salary as other workers. The minimum wage in the US is $ 7.25 an hour, but waiters only make about $ 2.13 an hour. This is because they "earn tips." So the business does not have to pay an adequate salary by law. In my opinion, that is not fair and it is something that I could talk about for hours, but the fact is that it is.

Consider this scenario: You eat for 45 minutes at a restaurant, and the bill is $ 20. Just tip 10%, and that's $ 2. In general, a server has 3 tables at the same time (although this is not the case all the time). If you leave $ 2 and your other tables also leave $ 2, you only win $ 6 for almost an hour. Less than the minimum wage.

You're probably thinking "well, he's got $ 2 an hour, too." But really, it's not like that. At the end of the day, the waiter has to pay a percentage of his tips to the bar and his helpers (as they are called "bus boys" here - they clean the tables and things like that). Also, this $ 2 is basically eaten up by taxes.

So if you pay nothing or pay less than 18–20%, maybe nothing is going to happen to you. But also, it's not just about you.

Tambien, este $2 basicamente esta comido por los impuestos.

Entonces, si no pagas nada o pagas menos de 18–20%, quiza nada va a suceder a ti. Pero tambien, no es solamente de ti.
